Mini Tiramisu Cookie Cups
Ingredients
• 1 ½ cups all-purpose flour
• ½ cup unsalted butter, softened
• ½ cup granulated sugar
• 1 egg
• 1 tsp vanilla extract
• ½ tsp baking powder
• ¼ tsp salt
• 1 cup mascarpone cheese
• ½ cup heavy cream
• 2 tbsp powdered sugar
• 1 tsp espresso powder
• ½ tsp cocoa powder

Instructions
1. Preheat oven to 350°F (175°C).
2. Cream butter and sugar until light and fluffy.
3. Add egg and vanilla, mix well.
4. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to butter mixture.
5. Press dough into greased muffin tins to form cups.
6. Bake 12–15 minutes, until golden brown. Let cool.
7. Whip heavy cream and powdered sugar until stiff peaks form.
8. Fold in mascarpone cheese and espresso powder.
9. Fill cooled cookie cups with the cream mixture.
10. Dust with cocoa powder before serving.
