Strawberry Crunch Cheesecake Cookies
Ingredients:
- 1 cup crushed graham crackers
- 1/2 cup butter, melted
- 1 package (8 oz) cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup diced strawberries
- 1/4 cup strawberry jam
- 1 cup crushed vanilla wafers
Directions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine crushed graham crackers and melted butter. Mix well and press the mixture into the bottom of a greased or lined baking sheet to form a crust.
3. In a separate large bowl, beat the cream cheese and sugar together until smooth and creamy.
4. Add the egg and vanilla extract to the cream cheese mixture and beat until combined.
5. Gently fold in the diced strawberries.
6. Spoon dollops of strawberry jam over the cream cheese mixture and swirl lightly with a knife.
7. Sprinkle the crushed vanilla wafers evenly over the top.
8. Bake for 25-30 minutes or until the edges are set and lightly golden.
9. Remove from oven and allow to cool completely before cutting into cookie-sized squares.
