Healthy Oven-Baked Zucchini Chips with Sauce
Ingredients:
For the Chips:
- 2 medium zucchinis, sliced into thin rounds
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1/4 cup nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp plant-based milk
For the Marinara Sauce:
- 1 cup canned crushed tomatoes
- 1 garlic clove, minced
- 1 tsp olive oil
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Combine breadcrumbs, nutritional yeast, garlic powder, paprika, salt, and pepper in a bowl.
3. Dip zucchini slices in plant-based milk, then coat with the breadcrumb mixture. Arrange on the baking sheet.
4. Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
5. In a small saucepan, heat olive oil and sauté garlic. Add crushed tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
6. Serve zucchini chips warm with marinara sauce for dipping.
