Satisfyingly Crispy Paleo Almond Chia Snack Mix for Energy Boosts 🌿πŸ’ͺ

Ingredients:
1 cup / 140g whole raw almonds
1/4 cup / 40g chia seeds
1/4 cup / 35g pumpkin seeds (pepitas)
1/4 cup / 30g shredded unsweetened coconut
2 tablespoons / 30ml melted coconut oil
1 tablespoon / 15ml maple syrup (optional, for non-strict Paleo) or liquid sweetener of choice
1/2 teaspoon / 2.5g ground cinnamon
1/4 teaspoon / 1.25g sea salt

Directions:
1. Preheat your oven to 300Β°F (150Β°C) and line a baking sheet with parchment paper.
2. Roughly chop the almonds. You want varying sizes for texture.
3. In a medium bowl, combine the chopped almonds, chia seeds, pumpkin seeds, and shredded coconut.
4. Drizzle the melted coconut oil and optional maple syrup (or sweetener) over the nut and seed mixture. Add the cinnamon and sea salt.
5. Stir everything together until well coated.
6. Spread the mixture in a single layer on the prepared baking sheet.
7. Bake for 15-20 minutes, stirring halfway through, until lightly golden and fragrant.
8. Let the crunch cool completely on the baking sheet. It will crisp up as it cools.
9. Break into pieces and store in an airtight container at room temperature.
