🛒 Ingredients:
8 bone-in chicken thighs or drumsticks 🍗
500 g baby potatoes, halved 🥔
2 carrots, sliced 🥕
1 red bell pepper, chopped 🌶️
1 small broccoli head, cut into florets 🥦
3 tbsp olive oil
1 tsp paprika
1 tsp garlic powder 🧄
1 tsp dried oregano or thyme
Salt & pepper to taste 🧂
Fresh parsley or lemon wedges for garnish 🍋🌿

Preheat your oven to 200°C (400°F). In a large bowl, toss the chicken, potatoes, and all the chopped vegetables with olive oil and seasonings until evenly coated. Spread everything out on a baking tray in a single layer. Bake for 40–45 minutes, or until the chicken is golden and cooked through and the veggies are tender. Garnish with fresh parsley or a squeeze of lemon before serving. Enjoy hot!
🔄 Tips:
Swap in sweet potatoes, zucchini, or red onion for variety. Boneless chicken works too, just reduce baking time slightly.
