Strawberry Shortcake Sheet Cake

Ingredients:

2 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup whole milk

1/2 cup sour cream

3 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

For the Whipped Cream Frosting:

2 cups heavy cream

1/4 cup powdered sugar

1 tsp vanilla extract

Instructions:

Prepare the cake:

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish and line the bottom with parchment paper for easy removal.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Add the dry ingredients in three parts, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.

Stir in the sour cream until the batter is smooth.

Pour the batter into the prepared baking dish and spread it evenly.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan on a wire rack.

Prepare the strawberry filling:

While the cake is cooling, combine the sliced strawberries and sugar in a bowl. Stir to coat the strawberries evenly. Let them sit for about 15-20 minutes to macerate and release their juices.

Make the whipped cream frosting:

In a large mixing bowl, beat the heavy cream with powdered sugar and vanilla extract using an electric mixer until stiff peaks form. Be careful not to overmix.

Assemble the cake:

Once the cake has cooled, spread a generous layer of whipped cream frosting over the top of the cake.

Spoon the macerated strawberries with their juice over the whipped cream layer.
