Old-fashioned Raisin Cake
Ingredients:
2 cups water
1 cup raisins
1 cup brown sugar
1/2 cup unsalted butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon vanilla
1/2 teaspoon salt
2 eggs
1/2 cup chopped walnuts (optional)
Instructions:
Preheat Oven to 350°F (175°C).
Cook Raisins: In a saucepan, boil water and raisins for 10 minutes. Add sugar, eggs and butter mix well.
Dry Ingredients: In a separate bowl, sift together flour, baking soda, cinnamon and salt.
Combine: Mix dry ingredients into the raisin mixture. Stir in walnuts if using.
Bake: Pour batter into a greased cake pan and bake for 35-40 minutes.
