Healthy Baked Crackers Loaded with Chia, Flax, and More Seeds 🌱✨
Ingredients:
1/2 cup / 70g sunflower seeds
1/4 cup / 35g pumpkin seeds
1/4 cup / 30g chia seeds
1/4 cup / 25g flax seeds
2 tbsp / 15g sesame seeds
1/2 cup / 60g gluten-free all-purpose flour (or almond/buckwheat flour)
1/2 tsp salt
1/4 tsp garlic powder (optional)
1 cup / 240ml water
1 tbsp / 15ml olive oil
Directions:
1. Preheat oven to 325°F (160°C). Line a large baking sheet with parchment paper.
2. In a large bowl, combine sunflower seeds, pumpkin seeds, chia seeds, flax seeds, sesame seeds, gluten-free flour, salt, and optional garlic powder. Stir well.
3. Add the water and olive oil. Mix thoroughly until all ingredients are combined. The mixture will be quite wet.
4. Let the mixture rest for 10-15 minutes to allow the chia and flax seeds to gel and thicken the batter.
5. Pour the mixture onto the parchment-lined baking sheet. Using an offset spatula or the back of a spoon dipped in water, spread the mixture as thinly and evenly as possible across the entire sheet.
6. Bake for 30 minutes. Remove from the oven and score into cracker shapes.
7. Return to the oven and bake for another 25-35 minutes, or until the crackers are completely dry, firm, and lightly golden. The edges will brown first.
8. Turn off the oven and let the crackers cool completely inside with the door slightly ajar.
9. Once cool, break apart along the score lines. Store in an airtight container.
