🥒 Creamy Cucumber Benedictine Tea Sandwiches
- Ingredients:
1 cucumber, thinly sliced
8 oz cream cheese, softened
2 tbsp mayonnaise
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
1 tbsp lemon juice
Salt and pepper, to taste
8 slices white or whole wheat bread, crusts removed
Fresh dill or parsley, for garnish (optional)
Instructions:
1️⃣ Prepare Cucumber:
Place cucumber slices in a colander and sprinkle lightly with salt.
Let sit for 10 minutes to draw out excess moisture, then pat dry with paper towels.
2️⃣ Make Cream Cheese Spread:
In a bowl, combine cream cheese, mayonnaise, dill, and lemon juice.
Stir until smooth and well combined.
Season with salt and pepper to taste.
3️⃣ Assemble Sandwiches:
Spread a thin layer of the cream cheese mixture onto each slice of bread.
Arrange cucumber slices on top.
Top with another slice of bread to form a sandwich.
4️⃣ Serve:
Cut sandwiches into small triangles or fingers.
