The ricotta keeps this cookie moist, and delicious. You can decorate them with chopped candied cherries, colored sugar, or candy sprinkles.

ITALIAN RICOTTA COOKIES
2 cups sugar
1 cup butter, softened
15 ounces of ricotta cheese
2 large eggs
2 tsp. vanilla extract
4 cups all-purpose flour
2 Tbsp. baking powder
1 tsp. salt

Glaze:
2 cups powdered sugar
3 Tbsp. milk

Preheat the oven to 350 degrees F
With an electric mixer beat together sugar and butter in a large bowl until light and fluffy, about 5 minutes.
Beat in ricotta, eggs, and vanilla.
In a separate bowl whisk together flour, baking powder, and salt. Add to the creamed mixture, mixing until a soft dough forms.
Drop dough onto a greased or parchment paper lined cookie sheet using a tablespoon or a cookie scoop.
Bake in the preheated oven until cookies are very lightly golden and soft, about 15 minutes
Allow to cool, and frost with glaze, decorate as desired.
To make glaze: Stir together powdered sugar and milk in a small bowl until smooth.
