No Bake Coffee Mousse Cake Recipe ❤❤

Ingredients:

For the crust:
1 ½ cups graham cracker crumbs (or digestive biscuits)
½ cup melted butter
2 tablespoons sugar (optional)
For the coffee mousse:
1 cup heavy cream
½ cup strong brewed coffee (cooled to room temperature)
1 tablespoon instant coffee granules (optional, for stronger coffee flavor)
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon unflavored gelatin
3 tablespoons cold water
For decoration:
Chocolate shavings, cocoa powder, or whipped cream (optional)

Instructions:

1. Make the Crust:
In a bowl, mix graham cracker crumbs, melted butter, and sugar (if using).

Press the mixture into the bottom of a springform pan (about 9 inches) to form a firm crust.

Refrigerate the crust while you prepare the mousse filling.

2. Prepare the Coffee Mousse:
In a small bowl, sprinkle the gelatin over cold water and let it bloom for about 5 minutes.

Once bloomed, heat the gelatin mixture in the microwave for 10-15 seconds to dissolve completely. Set aside to cool.

In a large mixing bowl, whip the heavy cream until stiff peaks form.

In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

Gradually add the cooled coffee and dissolved gelatin into the cream cheese mixture, and mix until well combined.

Gently fold in the whipped cream into the coffee mixture until smooth and fluffy.

3. Assemble the Cake:
Pour the mousse mixture onto the chilled crust, smoothing it out evenly.

Refrigerate the cake for at least 4-6 hours, or preferably overnight, to allow it to set and firm up.

4. Decorate and Serve:
Once set, remove the mousse cake from the springform pan.

Decorate with chocolate shavings, cocoa powder, or whipped cream if desired.
