Grilled Shrimp over Creamy Parmesan Grits with Herb Butter

Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp lemon juice
Salt and pepper, to taste
Chopped fresh parsley, for garnish
For the Creamy Parmesan Grits:
1 cup stone-ground grits
4 cups chicken broth (or water)
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 tbsp unsalted butter
Salt and pepper, to taste
For the Herb Butter:
1/4 cup unsalted butter, melted
2 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
1 tsp garlic powder
1/2 tsp crushed red pepper flakes (optional)
Salt and pepper, to taste
Instructions:
Prepare the Grits:
In a medium pot, bring chicken broth to a boil.
Gradually whisk in the grits and reduce heat to low.
Cover and simmer, stirring occasionally, for about 20-25 minutes until creamy.
Add heavy cream, butter, Parmesan cheese, salt, and pepper. Stir well.
Keep warm while preparing the shrimp.
Prepare the Shrimp:
In a medium bowl, combine shrimp, olive oil, garlic, lemon juice, salt, and pepper.
Heat a grill or grill pan over medium-high heat.
Cook shrimp for about 2-3 minutes on each side until they are pink and opaque.
Set aside and keep warm.
Prepare the Herb Butter:
In a small bowl, combine melted butter, parsley, chives, garlic powder, crushed red pepper flakes, salt, and pepper. Mix well.
To Serve:
Spoon creamy Parmesan grits onto plates or bowls.
Arrange grilled shrimp on top of the grits.
Drizzle the herb butter over the shrimp.
Garnish with additional Parmesan cheese and parsley if desired.
Serve immediately and enjoy!
