2 grilled chicken breasts, sliced
1 head romaine lettuce, chopped
1 avocado, diced
1 cup diced cucumber
1 cup diced tomatoes
ΒΎ cup roasted corn (or canned, drained)
2 tbsp olive oil
Salt & black pepper, to taste
Red pepper flakes (optional)
For the Creamy Avocado Dressing:
Β½ ripe avocado
ΒΌ cup Greek yogurt (or dairy-free alternative)
1 tbsp lime juice
1 tbsp olive oil
1 garlic clove
Salt & pepper, to taste
Fresh herbs (like cilantro or parsley), optional

Season chicken breasts with olive oil, salt, pepper, and a dash of paprika. Grill or pan-sear for 6β7 minutes per side. Let rest and slice thinly.

Chop romaine, avocado, cucumber, tomatoes, and roast or drain corn. Toss with a pinch of salt, black pepper, and a drizzle of olive oil.
