🗒 Ingredients:
For the Chocolate Cookie Crust:
24 chocolate sandwich cookies (Oreos or similar)
5 tablespoons unsalted butter, melted
For the Chocolate Cheesecake Layer:
8 oz (226g) cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 1/4 cups semi-sweet chocolate chips, melted and cooled slightly
1 cup heavy whipping cream, cold
For the Chocolate Ganache Topping:
3/4 cup semi-sweet chocolate chips
1/3 cup heavy whipping cream
Optional Toppings:
Mini chocolate chips
Chocolate curls
Whipped cream
Crushed Oreos
📝 Directions:
Prepare the Crust:
In a food processor, pulse the cookies into fine crumbs. Add melted butter and pulse until combined.
Press firmly into the bottom of a parchment-lined 8x8-inch pan. Chill in the fridge while you make the filling.
Make the Cheesecake Layer:
Beat softened cream cheese, powdered sugar, and vanilla extract until smooth.
Add melted (slightly cooled) chocolate and mix until fully combined.
In a separate bowl, beat the cold heavy cream to stiff peaks.
Fold the whipped cream gently into the chocolate cream cheese mixture until smooth and fluffy.
Spread evenly over the chilled crust. Return to the fridge.
Make the Ganache:
Heat heavy cream in a small saucepan or microwave until hot but not boiling. Pour over chocolate chips in a bowl.
Let sit 2–3 minutes, then stir until smooth.
Let cool for 10 minutes, then pour over cheesecake layer. Smooth the top.
Chill and Set:
Refrigerate at least 4 hours (preferably overnight) until fully set. Slice into squares and top as desired.
