Easy Gluten-Free Vegan Veggie Bites with Turmeric & Ginger ๐Ÿงก๐Ÿ’›๐Ÿฅ•๐ŸŒฟ

Ingredients:
1 cup / 110g Grated Carrots
1 cup / 120g Grated Zucchini, squeezed to remove excess moisture
0.5 cup / 75g Finely Chopped Onion
2 cloves Garlic, minced
1 tbsp Grated Fresh Ginger
1 tsp Turmeric Powder
0.5 cup / 60g Chickpea Flour (Besan)
0.25 cup / 15g Nutritional Yeast (optional, for cheesy flavor)
0.5 tsp Salt
0.25 tsp Black Pepper
2 tbsp Chopped Fresh Parsley or Cilantro
1 tbsp Olive Oil or Water (if needed for binding)

Directions:
1. Preheat oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.
2. Make sure the grated zucchini is well-squeezed to remove as much water as possible. Use a clean kitchen towel or cheesecloth.
3. In a large bowl, combine the grated carrots, squeezed zucchini, chopped onion, minced garlic, grated ginger, and turmeric powder. Mix well.
4. Add the chickpea flour, nutritional yeast (if using), salt, pepper, and chopped parsley (or cilantro) to the vegetable mixture.
5. Stir everything together until thoroughly combined. The mixture should hold together when pressed. If it seems too dry, add 1 tablespoon of olive oil or water.
6. With damp hands, form the mixture into small bite-sized balls or small patties (about 1.5 inches or 4 cm). Place them onto the prepared baking sheet.
7. Bake for 20-25 minutes, flipping gently halfway through, until the bites are firm, cooked through, and lightly golden on the bottom.
8. Let cool slightly on the baking sheet before transferring to a plate.
9. Serve warm, perhaps with a lemon-tahini dip or a cool cucumber yogurt sauce.
