🇮🇹 Tortelli di Zucca (Pumpkin-Filled Pasta) 🎃❤️
Sweet and savory pumpkin ravioli—an autumn classic from northern Italy.
📝 You will need:
• 300 g pumpkin, roasted and mashed
• 100 g grated Parmesan
• 1 egg yolk
• 1 pinch nutmeg
• Salt and pepper
• 300 g flour
• 3 eggs
• Butter and sage for sauce
👩🍳 Instructions:
1️⃣ Mix flour and eggs to make pasta dough. Rest 30 min.
2️⃣ Mix pumpkin with Parmesan, yolk, nutmeg, salt, and pepper.
3️⃣ Roll out dough, place filling, cover and cut into tortelli.
4️⃣ Boil in salted water until they float.
5️⃣ Melt butter with sage in a pan.
6️⃣ Toss drained pasta in butter and serve hot!
