Lemon Garlic Shrimp with Spinach Orzo 🍤🍋🌱
Ingredients:
- 1 pound fresh shrimp, peeled and deveined
- 2 cups fresh spinach, washed and chopped
- 1 cup orzo pasta
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 1 cup vegetable broth
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Begin by cooking the orzo pasta. Bring a large pot of salted water to a boil and add the orzo. Cook according to package instructions, typically around 8-10 minutes, until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) to the pan. Sauté for about 1-2 minutes, or until the garlic becomes fragrant but not browned.
3. Add the peeled and deveined shrimp to the skillet. Season the shrimp with salt and pepper, and cook for approximately 3-4 minutes, turning them occasionally, until they are pink and opaque.
4. Once the shrimp are cooked, pour in the vegetable broth and squeeze in the lemon juice. Be sure to stir well to combine the flavors. Allow the mixture to simmer for about 2-3 minutes.
5. Add the chopped spinach to the skillet and stir until wilted. This should take about 1-2 minutes.
6. Combine the cooked orzo with the shrimp and spinach mixture, gently folding everything together. Add lemon zest for an extra burst of flavor.
7. Taste and adjust the seasoning if necessary.
8. Serve warm, garnished with freshly chopped parsley for a touch of color and flavor. Enjoy your delightful Lemon Garlic Shrimp with Spinach Orzo!
