Honey Mustard Tilapia with Spinach Pasta
Golden Tilapia in Honey Mustard Glaze over Garlic Spinach Pasta
Ingredients:
4 tilapia fillets
2 tablespoons honey
1 ½ tablespoons Dijon mustard
2 teaspoons whole grain mustard
2 tablespoons olive oil, divided
1 tablespoon lemon juice
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper to taste
300g whole wheat spaghetti or pasta of choice
3 cups fresh spinach, roughly chopped
2 cloves garlic, minced
1 tablespoon lemon zest
2 tablespoons chopped parsley (optional)
Directions:
In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, lemon juice, garlic powder, paprika, salt, and pepper.
Pat tilapia fillets dry and brush generously with the honey mustard mixture on both sides. Let marinate for 10–15 minutes.
Heat 1 tablespoon of olive oil in a nonstick skillet over medium heat. Cook tilapia for 3–4 minutes per side, until golden and cooked through. Set aside and keep warm.
Meanwhile, cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain.
In the same skillet, heat remaining 1 tablespoon of olive oil over medium heat. Add garlic and sauté for 1 minute. Add spinach and cook until wilted.
Toss cooked pasta into the skillet with spinach and garlic. Add reserved pasta water as needed for moisture. Stir in lemon zest and parsley.
Plate the spinach pasta and top with the seared tilapia fillets. Drizzle any remaining honey mustard sauce over the fish. Serve hot.
