Ingredients:
For the Mango Layer:
2 ripe mangoes, peeled and diced
2 tbsp honey or sugar (optional)
1 tbsp lemon juice
For the Cream Layer:
1 cup heavy cream
1/2 cup Greek yogurt or mascarpone cheese
3 tbsp powdered sugar
1 tsp vanilla extract
For the Base:
1 cup granola or crushed biscuits (such as digestive or graham crackers)
For the Garnish:
Fresh edible flowers (such as pansies, marigolds, or violets)
Passion fruit pulp (for drizzling)
Fresh berries (blueberries, blackberries, etc.)
Instructions:
Prepare the Mango Layer:
In a blender or food processor, blend the diced mangoes until smooth.
If you prefer a sweeter taste, add honey or sugar, and mix in lemon juice to brighten the flavor. Set aside.
Make the Cream Layer:
In a mixing bowl, combine the heavy cream, Greek yogurt (or mascarpone), powdered sugar, and vanilla extract.
Using an electric mixer, whip until soft peaks form (about 2-3 minutes). The mixture should be thick but still smooth.
Assemble the Parfaits:
In each glass or dessert cup, add a layer of granola or crushed biscuits at the bottom.
Then, add a spoonful of the mango puree, followed by a layer of the whipped cream mixture.
Repeat the layers, finishing with a smooth layer of cream on top.
Garnish and Serve:
Top each parfait with fresh edible flowers for a beautiful touch.
