Savory Cajun Chicken Fettuccine in Creamy Garlic Butter Sauce

Ingredients:

4 boneless, skinless chicken breasts, sliced into strips
2 tbsp Cajun seasoning
2 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

For the Fettuccine Pasta:
12 oz fettuccine pasta
2 tbsp butter
1/2 cup reserved pasta water
1/4 tsp salt
1/4 tsp black pepper

Directions:

Season the chicken strips with Cajun seasoning, salt, and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-6 minutes, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside. In the same skillet, add chicken broth and heavy cream, scraping any flavorful bits from the bottom. Let it simmer for 2-3 minutes until it thickens slightly. Return the cooked chicken to the skillet, stirring to coat it in the creamy sauce. Set aside.
In a separate pot, cook the fettuccine pasta according to package instructions. Reserve 1/2 cup of pasta water before draining. Drain the pasta and set aside.
In the same skillet used for the chicken, melt 2 tbsp butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the reserved pasta water and season with salt and pepper. Stir in the Parmesan cheese and let the sauce thicken.
Add the cooked fettuccine to the skillet, tossing to coat the pasta in the creamy garlic butter sauce. Add the Cajun chicken and sauce back into the skillet, stirring everything together until well combined.
