Sweet Potato Stuffed Fried White Oreos
Ingredients:
For the Sweet Potato Filling:
- 1 cup mashed sweet potato (cooked and cooled)
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon vanilla extract
For the Oreo Stuffing:
- 12 White Oreos (or golden Oreos)
For the Batter:
- 1 cup all-purpose flour
- 1 tablespoon cornstarch
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 large egg
For Frying:
- Vegetable oil (enough for deep frying)
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions:
1. Prepare the Sweet Potato Filling:
In a bowl, mix the mashed sweet potato, brown sugar, cinnamon, nutmeg, and vanilla extract until smooth. Set aside.
2. Stuff the Oreos:
Gently separate the White Oreos into two halves. Place about 1 teaspoon of the sweet potato mixture on one half and press the other half back on top. Chill for 10 minutes to firm up.
3. Make the Batter:
In a large bowl, whisk together the flour, cornstarch, granulated sugar, baking powder, and salt. Add the milk, vanilla extract, and egg, whisking until smooth.
4. Heat the Oil:
Heat about 2 inches of vegetable oil in a skillet to 350°F (175°C).
5. Fry the Stuffed Oreos:
Dip each stuffed Oreo into the batter, coating it completely. Fry for 1-2 minutes per side until golden brown. Remove and drain on paper towels.
6. Prepare the Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract for the glaze.
7. Serve:
Drizzle the glaze over the warm fried Oreos and enjoy these delicious treats!
