🍫 S’mores Pancakes 🥞
Ingredients:
1 ½ cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
¼ tsp salt
1 cup buttermilk
2 large eggs
2 tbsp unsalted butter, melted
1 tsp vanilla extract
½ tsp almond extract (optional, for depth)
½ cup mini marshmallows
¼ cup crushed graham crackers
¼ cup chocolate chips or chopped dark chocolate
Toppings:
Extra mini marshmallows
Chocolate sauce or syrup
Graham cracker pieces
A squeeze of honey or sprinkle of cinnamon sugar (optional)
Instructions:
Prepare the Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the buttermilk, eggs, melted butter, vanilla extract, and almond extract (if using). Gradually pour the wet ingredients into the dry ingredients and stir until just combined.
Add S'mores Mix-ins
Fold in the marshmallows, crushed graham crackers, and chocolate chips into the pancake batter, distributing evenly.
Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Scoop about ¼ cup of batter per pancake onto the hot surface. Cook for 2–3 minutes until bubbles form on the surface and the edges begin to set. Flip and cook another 1–2 minutes until golden brown.
Serve Warm with Toppings
Stack the pancakes high and top immediately with extra marshmallows, a drizzle of chocolate sauce, and graham cracker pieces. For an extra treat, toast the marshmallows under the broiler or with a kitchen torch before serving.
