Easy Pistachio Cake with Cream Cheese Frosting
Ingredients:
• 1 box (15.25 oz) white cake mix
• 1 package (3.4 oz) instant pistachio pudding mix
• 4 large eggs
• 1 cup vegetable oil
• 1 cup whole milk
• 1/2 cup chopped pistachios (plus extra for topping)
• 8 oz cream cheese, softened
• 1/2 cup unsalted butter, softened
• 2 cups powdered sugar
• 1 teaspoon vanilla extract
Quick Preparation:
1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
2. In a large bowl, mix cake mix, pistachio pudding mix, eggs, oil, and milk until smooth. Stir in chopped pistachios.
3. Divide batter evenly into the pans and bake for 22–25 minutes. Let cool completely.
4. For the frosting: beat cream cheese and butter together until creamy. Gradually add powdered sugar and vanilla, beating until fluffy.
5. Layer and frost the cake. Top with chopped pistachios.
