Penne with Shrimp and Lemon Basil Cream
Creamy Lemon Basil Shrimp Penne Delight
Ingredients:
12 oz penne pasta
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1 tablespoon lemon zest
2 tablespoons lemon juice
1/4 cup fresh basil leaves, chopped
Salt and pepper to taste
1/2 teaspoon crushed red pepper flakes (optional)
2 tablespoons chopped parsley (for garnish)
Directions:
Cook the penne pasta according to package directions. Drain and set aside, reserving 1/2 cup of pasta water.
In a large skillet, heat olive oil over medium heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
In the same skillet, add garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, lemon zest, and lemon juice. Cook until the sauce thickens slightly, about 3-4 minutes.
Add the cooked penne and shrimp back into the skillet, tossing to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.
Stir in the fresh basil and season with salt, pepper, and red pepper flakes if using.
Serve immediately, garnished with chopped parsley.
