CREAMY CAJUN CHICKEN AND ASPARAGUS PENNE
Ingredients:
2 boneless, skinless chicken breasts, cut into strips
12 oz penne pasta
2 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp smoked paprika
1/2 tsp garlic powder
Salt and black pepper to taste
1 bunch asparagus, trimmed and cut into 2-inch pieces
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 tbsp butter
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the Penne: Bring a large pot of salted water to a boil. Add penne pasta and cook according to package directions until al dente. Drain and set aside.
2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken strips with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
Add chicken to the skillet and cook for 6–7 minutes, turning occasionally, until browned and cooked through. Remove chicken from skillet and set aside.
3. Cook the Asparagus: In the same skillet, add asparagus pieces and sauté for 3–4 minutes until tender but still crisp. Remove asparagus and set aside with the chicken.
4. Make the Creamy Cajun Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Pour in chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese, letting it simmer for 3–4 minutes until the sauce thickens and becomes creamy.
Add shredded mozzarella cheese and stir until melted and smooth.
5. Combine Pasta, Chicken, and Asparagus: Add the cooked penne pasta, chicken, and asparagus back into the skillet with the creamy Cajun sauce. Toss everything to coat evenly and let it simmer for 2–3 minutes to allow the flavors to meld together.
6. Garnish and Serve: Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese. Serve immediately and enjoy the creamy, zesty Cajun flavors!
