Pappa al Pomodoro – Tomato and Bread Soup 🍅 🇮🇹
Ingredients:
• Stale bread: 4 cups (200 g), torn into pieces
• Tomato puree: 2 cups (480 ml)
• Vegetable broth: 3 cups (720 ml)
• Garlic: 2 cloves, minced
• Olive oil: 4 tbsp (60 ml)
• Fresh basil: 2 tbsp (10 g), chopped
• Salt and pepper: To taste
Instructions:
1. Cook the garlic: Heat olive oil in a large pot over medium heat. Add the garlic and cook until fragrant, about 1 minute.
2. Add the tomatoes: Stir in the tomato puree and cook for 5 minutes.
3. Combine the bread and broth: Add the bread pieces and broth to the pot. Stir well and bring to a simmer.
4. Simmer the soup: Cook for 20-25 minutes, stirring occasionally, until the bread breaks down and the soup thickens.
5. Serve: Drizzle with olive oil and garnish with fresh basil before serving.
