Fagioli e Scarola (Beans and Escarole Soup) 🇮🇹
Ingredients:
• 2 cups cannellini beans, cooked (400g)
• 1 head escarole, chopped
• 4 cups vegetable broth (1L)
• 2 garlic cloves, minced
• 2 tbsp olive oil (30ml)
• Salt and pepper
Instructions:
1. Sauté garlic in olive oil, add escarole, and cook until wilted.
2. Add beans and broth, then simmer for 15 minutes.
3. Season to taste and serve warm with crusty bread.
