Chicken Tikka Rice Stir-fry | Slimming Friendly Recipe

6 tbsp Tikka curry powder
Juice of 1 lime
500g diced skinless chicken breast
2 tbsp fat-free natural yogurt
200g long grain rice, cooked and cooled
1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, diced
2 tsp smoked paprika
1 tsp minced garlic
1 chicken stock cube, dissolved in 125 ml water
3 tbsp tomato puree

Directions:
1. Mix 3 tablespoons of tikka curry powder with natural yogurt, then coat the diced chicken. Refrigerate for at least 20 minutes.
2. Spray a large frying pan with low-calorie cooking spray and fry the onion and peppers until softened.
3. Add garlic, the remaining tikka curry powder, and smoked paprika to the pan.
4. Add the marinated chicken and cook through.
5. Pour in the stock, rice, and tomato puree. Mix well and simmer until the stock is absorbed by the rice.
