Ingredients
For the Grilled Chicken:
🍗 Chicken breasts – 2
🧂 Salt & pepper – to taste
🧄 Garlic powder – 1/2 tsp
🌶️ Smoked paprika – 1/2 tsp
🫒 Olive oil – 1 tbsp
For the Bowl:
🥬 Mixed greens or kale – 3 cups
🍅 Cherry tomatoes – 1 cup, halved
🥑 Avocado – 1, sliced
🥚 Hard-boiled eggs – 2, halved
🧅 Red onion – 1/4, thinly sliced
For the Dressing:
🍋 Lemon juice – 1 tbsp
🫒 Olive oil – 2 tbsp
🥄 Honey – 1 tsp
🧄 Dijon mustard – 1 tsp
🧂 Salt & pepper – to taste
Directions
Prepare the Chicken:
Rub the chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper.
Heat a grill pan or skillet over medium heat. Cook the chicken for 6–8 minutes per side until golden and cooked through. Remove from heat, let rest for 5 minutes, then slice.
Prepare the Dressing:
In a small bowl, whisk together lemon juice, olive oil, honey, Dijon mustard, salt, and pepper. Set aside.
Assemble the Bowl:
Divide the mixed greens or kale between two bowls. Arrange the sliced chicken, cherry tomatoes, avocado slices, hard-boiled eggs, and red onion on top.
Serve:
Drizzle the dressing over the bowls, garnish with freshly cracked black pepper, and serve immediately!

Add cooked quinoa or farro for a more filling bowl.
Sprinkle feta cheese or roasted nuts for extra flavor and crunch.
