Classic Coffee and Walnut Cake ☕🌰
A Coffee and Walnut Cake is a true British classic—rich, nutty sponge infused with coffee, layered and topped with a creamy coffee buttercream, and finished with crunchy walnuts. Perfect for afternoon tea or a delightful treat for coffee lovers!

🛒 Ingredients
For the Sponge:
🥚 Eggs – 3 large
🧈 Unsalted Butter – 175g, softened
🍯 Caster Sugar – 175g
🍞 Self-Raising Flour – 175g
🌰 Walnuts – 75g, chopped
Instant Coffee Granules – 1 tbsp (dissolved in 1 tbsp hot water)
🧂 Salt – A pinch

For the Coffee Buttercream:
🧈 Unsalted Butter – 125g, softened
🍚 Icing Sugar – 250g
☕ Instant Coffee Granules – 1 tbsp (dissolved in 1 tbsp hot water)

For Decoration:
🌰 Walnut Halves – 10-12 for topping

👨‍🍳 Method
1️⃣ Preheat & Prepare:

Preheat your oven to 180°C (fan 160°C) / Gas Mark 4.
Grease and line two 20cm (8-inch) round cake tins with baking paper.
2️⃣ Make the Sponge Batter:

In a large bowl, cream together the butter and caster sugar until light and fluffy.
Beat in the eggs, one at a time.
Fold in the flour, chopped walnuts, and salt, then stir in the dissolved coffee.
3️⃣ Bake the Cakes:

Divide the mixture evenly between the two tins and smooth the tops.
Bake for 20-25 minutes, until golden and a skewer inserted into the centre comes out clean.
Let the cakes cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.
4️⃣ Make the Coffee Buttercream:

Beat the butter until creamy, then gradually mix in the icing sugar.
Add the dissolved coffee and beat until smooth and fluffy.
5️⃣ Assemble the Cake:

Spread half of the buttercream over one sponge, place the second sponge on top, and spread the remaining buttercream over the top.
Decorate with walnut halves.
6️⃣ Serve & Enjoy:

Slice and serve with a cup of tea or coffee for a truly indulgent treat! ☕💛
