Fluffy Cottage Cheese Cloud Bread ☁️🧀
Ingredients:
3 large eggs, separated
1/2 cup cottage cheese, blended until smooth
1/4 teaspoon cream of tartar
1/2 teaspoon salt
1 tablespoon cornstarch or arrowroot powder (optional, for structure)
1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness)
Instructions
Preheat the Oven:
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Prepare the Egg Whites:
In a clean bowl, beat the egg whites with a hand mixer or stand mixer on medium-high speed until stiff peaks form. This should take around 2-3 minutes.
Mix the Egg Yolks:
In another bowl, whisk the egg yolks, cottage cheese, cream of tartar, salt, and optional sweetener (honey or sweetener) until smooth and well combined.
Combine the Mixtures:
Gently fold the egg whites into the egg yolk mixture, being careful not to deflate the egg whites too much. If you're using cornstarch or arrowroot powder, fold it into the yolk mixture now.
Form the Cloud Bread:
Spoon the mixture onto the prepared baking sheet, forming 6-8 round mounds (each about the size of a small burger patty).
Bake the Cloud Bread:
Bake in the preheated oven for 25-30 minutes, or until the tops are lightly golden brown and firm to the touch.
Cool:
Allow the cloud bread to cool on a wire rack for a few minutes before serving.
Serving Suggestions:
Enjoy as a sandwich base, with avocado, or as a snack with your favorite spreads!
Tips:
The cloud bread is best eaten fresh but can be stored in an airtight container for up to 3 days.
You can experiment by adding garlic powder, herbs, or other spices for a savory twist!
