Za’atar Roasted Eggplant & Greek Chickpea Pasta Salad 🌿
Ingredients:
• For the Za’atar Roasted Eggplant:
• 1 large eggplant, sliced into 1/2-inch rounds
• 2 tbsp olive oil
• 1 tbsp za’atar seasoning
• Salt and pepper, to taste
• For the Pasta Salad:
• 1 cup chickpea pasta (or your favorite pasta)
• 1 cup cherry tomatoes, halved
• 1/2 cup cucumber, diced
• 1/4 cup kalamata olives, pitted and sliced
• Fresh parsley, chopped (for garnish)
• For the Smoky Tahini-Yogurt Dressing:
• 1/4 cup tahini
• 1/4 cup Greek yogurt
• 1 tbsp lemon juice
• 1 tbsp olive oil
• 1 tsp smoked paprika
• Salt and pepper, to taste
• For Garnish:
• Sumac, for sprinkling
Instructions:
1. Make the Za’atar Roasted Eggplant:
• Preheat your oven to 400°F (200°C).
• Arrange the eggplant slices on a baking sheet. Drizzle with olive oil, and sprinkle with za’atar seasoning, salt, and pepper.
• Roast for 20-25 minutes, flipping halfway, until the eggplant is golden and tender. Remove from the oven and set aside.
2. Make the Pasta Salad:
• Cook the chickpea pasta according to package instructions. Drain and rinse with cold water to cool the pasta.
• In a large bowl, combine the cooled chickpea pasta with halved cherry tomatoes, diced cucumber, and sliced olives. Toss to combine.
3. Make the Smoky Tahini-Yogurt Dressing:
• In a small bowl, whisk together tahini, Greek yogurt, lemon juice, olive oil, smoked paprika, salt, and pepper until smooth and creamy. Adjust the consistency with a splash of water if needed.
4. Assemble the Salad:
• Add the roasted za’atar eggplant to the pasta salad and gently toss.
• Drizzle the smoky tahini-yogurt dressing over the salad and toss to combine.
5. Serve:
• Garnish with a sprinkle of sumac and fresh parsley before serving.
