Crustless Quiche with Cheese and Leeks
Ingredients:
4 large eggs
1/2 cup milk
2 medium leeks (cleaned and sliced)
1/2 cup grated cheddar cheese
1/4 cup grated parmesan cheese
1 tablespoon olive oil
Salt and pepper to taste
1/4 teaspoon dried thyme
Directions:
Preheat the oven to 375°F (190°C). Grease a quiche dish or pie pan.
Heat olive oil in a skillet over medium heat. Add the sliced leeks and cook, stirring occasionally, until soft and tender, about 8-10 minutes.
In a bowl, whisk together eggs, milk, salt, pepper, and thyme. Stir in the cooked leeks and both cheeses.
Pour the mixture into the prepared dish and bake for 25-30 minutes, or until the quiche is set and golden on top.
Let cool slightly before slicing. This quiche pairs wonderfully with a fresh green salad.
