Ingredients:
For the Chocolate Filling:
1 pre-baked 9-inch pie crust
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/4 cup cornstarch
1/4 tsp salt
2 cups whole milk
4 large egg yolks (reserve whites for meringue)
2 tbsp unsalted butter
1 tsp vanilla extract
For the Golden Meringue:
4 large egg whites
1/4 tsp cream of tartar
1/2 cup granulated sugar
Instructions:
Make the Chocolate Filling:
In a saucepan, whisk sugar, cocoa powder, cornstarch, and salt.
Gradually add milk, stirring until smooth.
Cook over medium heat, stirring constantly, until thick and bubbly (about 5-7 minutes).
Remove from heat.
In a small bowl, whisk egg yolks. Slowly add 1 cup of the hot mixture to the yolks, whisking constantly.
Pour the yolk mixture back into the saucepan.
Cook for another 2 minutes, then remove from heat.
Stir in butter and vanilla.
Pour the Filling:
Pour the hot chocolate filling into the pre-baked pie crust.
Make the Golden Meringue:
Preheat oven to 350°F (175°C).
In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
Gradually add sugar, beating until stiff, glossy peaks form.
Top and Bake:
Spread meringue over the chocolate filling, sealing the edges.
Bake for 10-12 minutes or until meringue is golden brown.
Cool & Serve:
Let cool to room temperature before slicing.
