Ingredients:
For the Fritters:
2 cups all-purpose flour
1/4 cup granulated sugar
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
2 large eggs
1/2 cup milk
2 tbsp unsalted butter, melted
1 tsp vanilla extract
2 medium apples, peeled and diced (Granny Smith or Honeycrisp recommended)
For the Glaze:
1 1/2 cups powdered sugar
3 tbsp milk
1/2 tsp vanilla extract
Directions:
1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or grease it lightly.
2. Make the Fritter Batter: In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the diced apples.
3. Form the Fritters: Drop spoonfuls of the batter onto the prepared baking sheet, forming small mounds (about 2 tablespoons each). Leave space between each mound to allow for spreading.
4. Bake the Fritters: Bake for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean. Let the fritters cool slightly on a wire rack.
5. Prepare the Glaze: While the fritters are cooling, whisk together the powdered sugar, milk, and vanilla extract until smooth.
6. Glaze the Fritters: Dip the slightly cooled fritters into the glaze or drizzle the glaze over the top using a spoon. Allow the glaze to set before serving.
