Method
🔥 Preheat the Oven:

Preheat the oven to 160°C (fan)/180°C/gas mark 4.

🍲 Add Stock and Seasoning:

Gradually pour in the stock, stirring to prevent lumps. Add the bay leaves and thyme.
Return the browned meat to the pan and stir well. Season with salt and pepper.
🥔 Layer the Potatoes:

Arrange the sliced potatoes neatly on top of the meat and vegetable mixture, overlapping slightly to create a pattern.
Brush the potato slices generously with the melted butter and sprinkle with a little salt and pepper.
🔥 Cook the Hotpot:

Cover the dish with a lid or foil and bake in the preheated oven for 1½ hours.
After 1½ hours, remove the lid or foil and cook for a further 30 minutes until the potatoes are golden and crispy.
