Beef Bourguignon 🥩🍲

This alcohol-free take on the classic beef bourguignon is just as rich and comforting. Slow-cooked to perfection with tender beef, earthy mushrooms, and a velvety sauce, it's perfect for a special family dinner.

Ingredients
🥩 Beef chunks: 800g, diced (braising or stewing beef is ideal)
🧅 Onions: 2 medium, finely chopped
🥕 Carrots: 2 large, sliced
🍄 Mushrooms: 200g, sliced
🥬 Celery: 1 stalk, chopped
🧈 Butter: 50g
🌽 Plain flour: 2 tbsp
🍗 Beef stock: 500ml
🍎 Apple juice: 250ml (adds sweetness and depth, replacing wine)
🌿 Thyme: 1 tsp, dried or fresh
🌿 Bay leaves: 2
🥄 Tomato purée: 1 tbsp
🛢️ Olive oil: 2 tbsp
🧂 Salt: To taste
⚫ Black pepper: To taste
🌿 Fresh parsley: Chopped, for garnish
Method
🥩 Prepare the beef: Toss the beef chunks in plain flour, salt, and pepper.
🍳 Brown the beef: Heat olive oil in a large casserole dish over medium heat. Sear the beef in batches for 2–3 minutes on each side until browned. Remove and set aside.
🧅 Cook the vegetables: In the same dish, melt the butter and sauté the onions, carrots, celery, and mushrooms for 5–7 minutes until softened.
🥄 Add tomato purée and spices: Stir in the tomato purée, thyme, and bay leaves. Cook for 1 minute to release the flavours.
🍗 Build the stew: Return the beef to the dish. Pour in the beef stock and apple juice, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer.
⏳ Slow cook: Cover the casserole dish with a lid and simmer on low heat for 2–3 hours, stirring occasionally, until the beef is tender and the sauce is thickened.
🌿 Garnish: Remove the bay leaves, adjust seasoning, and sprinkle with fresh parsley before serving.
