Pumpkin Apple Fall Crumble Muffins
Ingredients:
For the Muffins:
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup pumpkin puree
- 1/2 cup apple juice or apple sauce
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped apples (peeled and cored)
For the Crumble Topping:
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions:
1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
2. Mix dry ingredients: In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. Combine wet ingredients: In another bowl, whisk together pumpkin puree, apple juice or sauce, oil, eggs, and vanilla.
4. Mix batter: Pour wet ingredients into dry ingredients and stir until just combined. Fold in chopped apples.
5. Prepare crumble topping: In a small bowl, combine oats, flour, brown sugar, cinnamon, and cold butter. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
6. Fill muffin cups: Divide batter evenly among the muffin cups. Sprinkle crumble evenly over the tops.
7. Bake: For 20-25 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
