Chocolate Chip Cookie Cheesecake Bars
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semisweet chocolate chips
- 16 ounces cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan and set aside.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in the eggs and vanilla extract until well combined.
4. In a separate bowl, whisk together the flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
6. Fold in 1 1/2 cups of the chocolate chips.
7. Press about two-thirds of the cookie dough evenly into the prepared baking pan.
8. In another bowl, beat the cream cheese and sugar until smooth and creamy.
9. Add the eggs and vanilla extract to the cream cheese mixture and beat until combined.
10. Pour the cream cheese mixture over the cookie dough layer in the pan.
11. Crumble the remaining cookie dough over the cheesecake layer.
12. Sprinkle the remaining chocolate chips on top.
13. Bake for 40-45 minutes or until the cheesecake layer is set and the top is lightly browned.
14. Allow to cool completely before cutting into bars.
