Dry Base:
2 cups all-purpose flour
½ cup granulated sugar
1 tbsp baking powder
½ tsp baking soda
½ tsp fine sea salt
½ tsp freshly grated nutmeg (or ground)
Wet Mix:
½ cup cold buttermilk
2 large eggs, lightly beaten
1 tsp pure vanilla extract
¼ cup unsalted butter, melted and cooled
For Frying & Finishing:
4–6 cups neutral oil (like canola or vegetable), for deep frying
¾ cup powdered sugar, for dusting (sifted)

Prep Station: Line a baking sheet with paper towels. Set a wire rack on top if available — this helps keep beignets crisp while draining. Measure all ingredients before starting.
Mix Dry: In a large bowl, sift together flour, sugar, baking powder, baking soda, salt, and nutmeg. Whisk thoroughly to aerate and evenly distribute leaveners.
Blend Wet: In a separate bowl, whisk buttermilk, eggs, vanilla, and cooled melted butter until smooth. The mixture should be slightly thick but pourable.
Combine Gently: Pour wet ingredients into dry. Using a silicone spatula, fold just until no dry streaks remain. A few small lumps are fine — overmixing causes toughness.
Rest Briefly: Let batter sit 10 minutes. This activates the leaveners for maximum puff.
Heat Oil: In a heavy pot or Dutch oven, heat 3 inches of oil over medium heat to 350°F (175°C). Use a thermometer — consistent temp is key. Adjust heat as needed to maintain.
Fry in Batches: Drop heaping tablespoonfuls of batter into hot oil (about 4–5 at a time). Do not crowd. Fry 2–3 minutes per side, flipping once, until deep golden brown and puffed.
Drain & Cool Slightly: Remove with a slotted spoon or spider strainer. Let excess oil drip off, then transfer to prepared rack or paper towels.
Sugar Shower: While still warm (but not scalding), place beignets in a large paper bag or shallow bowl. Add powdered sugar, seal or cover, and gently shake to coat evenly.
Serve Immediately: Best enjoyed within 15 minutes of frying. Pair with chicory coffee, fresh berries, or dipping sauces like chocolate or salted caramel.
