🍨 Mexican Fried Ice Cream 😋
Ingredients:
• 4 large scoops vanilla ice cream
• 2 cups cornflakes, crushed
• 1 tsp ground cinnamon
• 2 tbsp granulated sugar
• 2 eggs
• Oil for frying (vegetable or canola)
• Optional toppings: honey, whipped cream, chocolate syrup, maraschino cherries
Instructions:
1️⃣ Prepare Ice Cream Balls:
• Scoop the ice cream into 4 large balls.
• Place on a tray and freeze for at least 1 hour or until very firm.
2️⃣ Coating Mixture:
• In a bowl, mix crushed cornflakes, cinnamon, and sugar.
• In another bowl, beat the eggs.
3️⃣ Coat the Ice Cream:
• Roll each frozen ice cream ball in the cornflake mixture, then dip into the eggs, then roll again in the cornflake mixture to fully coat.
• Freeze again for at least 3 hours or until solid.
4️⃣ Fry the Ice Cream:
• Heat oil in a deep fryer or pot to 375°F (190°C).
• Fry each ice cream ball for about 10 seconds or until golden and crisp. Remove quickly and drain on paper towels.
5️⃣ Serve:
• Serve immediately with your favorite toppings.
