No-Bake Strawberry Icebox Cake
Ingredients:
- 2 lbs fresh strawberries, sliced
- 2 cups heavy whipping cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 box (14.4 oz) graham crackers
- ½ cup strawberry jam (optional, for extra flavor)
Instructions:
Preparing the Whipped Cream:
1. In a large bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Assembling the Cake:
1. Spread a thin layer of whipped cream on the bottom of a 9x13-inch baking dish.
2. Place a single layer of graham crackers over the whipped cream.
3. Spread a layer of whipped cream over the graham crackers, followed by a layer of sliced strawberries.
4. Repeat the layers (graham crackers, whipped cream, strawberries) until you reach the top of the dish, finishing with a final layer of whipped cream and strawberries.
5. (Optional) Drizzle strawberry jam between layers for extra flavor.
Chilling and Serving:
1. Cover and refrigerate for at least 4 hours, or overnight, to allow the graham crackers to soften.
2. Slice and serve chilled.
