Protein Power Salad Bowl 🥗🍗🥑
Ingredients:
1 grilled chicken breast, sliced
1 hard-boiled egg, halved
1/2 avocado, sliced
1/2 cup mixed olives (green & black)
1/2 cucumber, thinly sliced
1–2 cups fresh greens (spinach, arugula, or mixed lettuce)
Salt & black pepper to taste
Optional Dressing:
2 tbsp olive oil
1 tbsp lemon juice or vinegar
1 tsp Dijon mustard (optional)
Pinch of salt & pepper
Instructions:
Grill the chicken: Season with salt, pepper, and a touch of paprika or garlic powder. Grill until fully cooked, then slice.
Prep the eggs: Boil eggs to your preferred doneness, cool, peel, and slice.
Assemble the bowl: In a large bowl, layer the greens, then top with cucumber, avocado, eggs, olives, and grilled chicken.
Dress & enjoy: Drizzle with your dressing of choice and a crack of black pepper.
