After a fun weekend watching the big game š with family and friends plus indulging on all the yummy football food I went for a long bike ride š“ and now Iām getting back on track with this plate of goodness.
Oven baked salmon š, crispy chili roasted chickpeas and juicy roasted cherry tomatoes š
with a jammy soft boiled egg š„, half an avocado š„ and lemony arugula ššæ
For the salmon, place on a sheet pan over lemon slices, season with garlic powder, black pepper, sea salt and olive oil. Bake in oven or toaster oven on 400 for 12-15 minutes depending on the size of the salmon.
For the jammy eggs, fill a pot with enough water to cover the eggs and bring to a full boil. Carefully place the eggs into the boiling water and boil for 8 minutes. Immediately remove the eggs to an ice bath and let cool in the cold water for 10 minutes before peeling.
