This is a family recipe from my husband's family. They owned a deli in New Jersey many years ago and this is the mac salad they made. Yum! It's always a hit
Ingredients:
1 lb elbow macaroni, cooked and drained
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon white vinegar
1 teaspoon sugar
1 teaspoon salt
½ teaspoon black pepper
½ red onion, finely chopped
2 hard-boiled eggs, chopped
1 cup celery, chopped
Directions:
In a large bowl, combine cooked macaroni, chopped onion, eggs, and celery.
In a separate bowl, mix mayonnaise, Dijon mustard, vinegar, sugar, salt, and pepper.
Stir the dressing into the macaroni mixture until well combined.
Chill in the refrigerator for at least 2 hours before serving.
Serve as a refreshing side dish to any meal!
