🇮🇹 Pappardelle al Cinghiale (Wild Boar Ragu) 🍝❤️
Rich, slow-cooked wild boar ragu on wide ribbons of pasta—Tuscan comfort at its finest.
📝 You will need:
• 500 g wild boar meat, diced
• 1 onion, chopped
• 1 carrot, chopped
• 1 celery stalk, chopped
• 2 garlic cloves
• 400 g crushed tomatoes
• 250 ml red wine
• 2 tbsp olive oil
• 1 bay leaf, rosemary, salt & pepper
• 400 g pappardelle pasta
👩🍳 Instructions:
1️⃣ Sear wild boar in olive oil until browned.
2️⃣ Add onion, carrot, celery, and garlic. Sauté until soft.
3️⃣ Pour in red wine, let it reduce.
4️⃣ Add tomatoes, herbs, salt and pepper. Simmer for 2 hours.
5️⃣ Cook pappardelle in salted water, then drain.
6️⃣ Toss pasta with ragu and serve with extra Parmesan!
