BISCOFF CHEESECAKE BARS
You Will Need (Crust):
24 Biscoff cookies (crushed)
1/4 cup melted butter
Filling:
16 oz cream cheese (softened)
1/2 cup sugar
1 tsp vanilla extract
2 large eggs
1/4 cup sour cream
1/3 cup Biscoff spread
Topping:
1/3 cup melted Biscoff spread
Crushed Biscoff cookies for garnish

Instructions:
1. Preheat oven to 325°F (160°C). Line an 8x8-inch pan with parchment paper.
2. Mix crushed Biscoff cookies with melted butter. Press into the pan and bake for 8 minutes. Let cool.
3. Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream.
4. Mix in Biscoff spread until creamy.
5. Pour over crust and smooth. Bake for 35–40 mins until set.
6. Cool completely, then chill 4 hours or overnight.
7. Drizzle with melted Biscoff and sprinkle crushed cookies on top before slicing.
