Beef and Spinach Tortellini in Garlic Butter Sauce
Ingredients:
1 pound beef tortellini (fresh or frozen)
1 tbsp olive oil
1 pound ground beef
1/2 cup chopped yellow onion
2 cloves garlic, minced
5 ounces fresh spinach, roughly chopped
1/2 cup heavy cream
1/4 cup grated Parmesan cheese, plus more for serving
1/4 cup butter
1/4 cup chicken broth
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper to taste
Directions:
1. Cook the tortellini according to package directions. Drain and set aside.
2. While the tortellini is cooking, heat the olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
3. Add the chopped onion and minced garlic to the skillet and cook until softened, about 3-5 minutes.
4. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
5. Pour in the heavy cream, Parmesan cheese, and butter. Stir until the butter is melted and the sauce is smooth and creamy.
6. Add the cooked tortellini and chicken broth to the skillet and toss to coat. Season with Italian seasoning, red pepper flakes (if using), salt, and pepper to taste.
7. Simmer for 2-3 minutes, allowing the flavors to meld together.
8. Serve immediately, garnished with extra Parmesan cheese.
