Easter Italian Cookies
Ingredients:
For the Cookies:
3 1/4 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
3 large eggs
1 tbsp vanilla extract
1/2 cup milk
For the Glaze:
2 cups powdered sugar
4 tbsp milk
1/2 tsp vanilla or almond extract
Food coloring (optional)
Multicolored nonpareil or pastel sprinkles
Directions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add in the eggs one at a time, beating well after each addition. Mix in vanilla extract.
Gradually add dry ingredients to the wet mixture, alternating with milk. Mix until soft dough forms.
Scoop tablespoon-sized portions, roll into balls, and place 2 inches apart on the baking sheet.
Bake for 10–12 minutes or until bottoms are lightly golden. Let cool on a wire rack.
To make the glaze, whisk powdered sugar, milk, and extract until smooth. Divide and color if desired.
Dip cooled cookies into glaze, top with sprinkles, and let set completely.
