ZUCCHINI AND CHERRY TOMATO CRUSTLESS QUICHE πŸ…πŸŒΏπŸ…πŸŒΏπŸ…πŸŒΏ

Crustless quiche is everything you know and love about classic quiches - minus carbs! It's easy - fast - delicious and if you have leftovers the next day, add it into a crusty bread roll or wraps!

RECIPE Serves 3-4
Ingredients πŸ›’
1 Zucchini, sliced
1 Onion, sliced
1 Tsp Dried Basil
1 Tsp Dried Oregano
5 Cherry Tomatoes, halved
1 Cup/100g Shredded Cheddar Cheese
6 Large Eggs
1 Cup/250ml Double Cream/Heavy Cream
Salt & Pepper

Method:
Preheat oven to 180C/350F.
In a little olive, brown the zucchini from both sides. Remove from pan and set aside.
To the same pan, melt 1 tablespoon butter and saute the onions. When they start to soften stir in the basil and oregano. Remove from heat and set aside.
In a small bowl, beat the eggs and cream and season with salt and pepper.
Butter grease a 28cm pie dish and scatter the sliced onions leaving a few for on top.
Scatter half of the shredded cheddar on top and pour over the egg mixture.
Top with remaining cheddar, zucchini slices, remaing onions and place the halved cherry tomatoes in between.
Bake in oven for approximately 45 minutes or until set and golden on top.
